Description
Alc. 14.5% – RS 4.1 g/l – pH 3.71 – TA 4.6 g/l
These grapes are grown on the Yellowwood property in Schist soils of the Kasteelberg. Harvested by hand, sorted and fermented with 30% whole clusters under a submerged cap. This allows for soft and gentle extraction, without releasing harsh tannins. Maturation took place in foudre for 10 months and a further 12 months ageing in bottle.
The nose shows elegant red fruit with hints of spice that follows through to a full, round palate.
