Alc. 14.5% – RS 1.4 g/l – pH 3.72 – TA 4.7 g/l
Our Mataro grapes are dryland-farmed on the iron-rich soils of Malmesbury, known as “koffieklip”. Fermented in open top concrete tanks with 30% whole clusters added and two pump-overs done per day. Maturation took place in foudre for 10 months and a further 12 months ageing in bottle.
This wine shows dark fruit and violets on the nose with the palate being deep and full with well integrated tannins.
